My style of Okonomiyaki-Japanese Pizza


Wallace and I love Okonomiyaki, we used to visit this restaurant at the Basement of Takashimaya's Shopping Centre (in Singapore) to eat this. The staff will cook fresh in front of you, so it was an interesting sight for Wallace who was then about 5years old. At times, we will be joined by my best friend-Kat on weekends. After patronzing the restaurant for almost a year, the restaurant gone missing. Till date, it is still a mystery - has it been relocated or the business did not make it. I got this recipe from internet and I used some of the basic ingredients needed and modified it.

Ingredients for Okonomiyaki

Batter
100g Plain Flour (You can substitute it with self-raising flour,  you just have to omit baking powder and salt in this instance as baking powder and salt have been incorporated into this flour)
75ml Dashi Concentrate Stock (If you are using Dashi Stock, you can substitute the water with Dashi Stock
75ml Water
1/4 Teaspoon of  Baking Powder
A Dash of Salt
200g Cabbage (Chopped into fine strips)
1 Medium Size Potato (Chopped into fine strips)
8  Prawns/Shrimps (Shell and Deveined)
2 Eggs
150g Bacon (Cut into 3cm long slices)
1/2 Tablespoon Oil

Toppings
Okonomiyaki Sauce (or Tonkatsu sauce)
Mayonnaise
Ao-nori (Green seaweed)

1. Pour Dashi soup stock in a bowl.
2. Mix the flour, baking powder and salt in the soup stock.
3. Put the batter for an hour in the refrigerator.
4. Take about 1/4 cup of the batter  in another bowl and set aside.
5. Mix chopped cabbage, potatoes and prawns into 3/4 balance of the batter. Mix well.
6.Make a hole in the middle of the batter and the eggs in the hole. Stir the batter.
7. Heat an electric pan and oil slightly.
8. Pour the batter over the pan and make a round. Cook with low heat for 5minutes.
9. Line the bacon slices on top of the batter.
10. Brush the balance 1/4 cup of the batter which you set side earlier on top of the bacon.
11. Flip the Okonomiyaki and cook for 5-7 more minutes.
12. Flip the Okonomiyaki again and remove it from the pan.
13. Spread Okonomiyaki sauce(or Tonkatsu sauce) and mayonnaise on top. Sprinkle Ao-nori over the sauce ( I did not managed to buy it as I did not have time to go down to the Japanese Groceries Store in the city).

Reading this post, brings back some nice memories.... Yes, Wallace was still very young then, and then we at times got to buy toys for him to "distract" him so that we can shop longer after the lunch! hahaha....
That owner decided to move back to Australia... I think I remembered that cos I talked to him before the official "closing"... :)
BTW, what is Dashi Stock? Have a pic to show, is it something that can buy in the Jap supermarket?

Hahaha...I still can remembered buying cars at the toy dept..Oh I see...moved back to OZ.
Dashi is Japanese stock...I asked the shop staff for help as I can't read Japanese. You can buy it at Japanese supermarket. I will try to take photo and send it to u.
