Potato Egg Salad for the Party


Last saturday, I prepared a  potato egg salad for the party of 16 guests. The salad was well-received by the guests. It was simple to prepare. No quantities was specified as I was making for a group of 16 guests, so you will need to do your own estimation.

Ingredients:
Potatoes-Peeled, Cut into cubes and boiled it
Hard Boiled eggs-Chopped into fine pieces and saved one hard boiled egg and cut into slices.
Mayonnaise
Lemon Zest
Some lemon juice
Dash of Salt
Dash of Pepper
Parsley-Finely chopped

1. Mix mayonnaise, lemon zest, lemon juice, salt, pepper and parsley together. Test the taste and adjust according to your own preference..
2. Mix in the chopped eggs and potatoes with the mixture.Mix well.
3. Garnish it with the sliced eggs. Chill the salad in the fridge for at least an hour before serving.

I like this pic! Makes me feel like eating... yum yum... haha! Think when you back, we shall org a "small" party at my place, and you help me with the preparation... Ha!
