Home-cooked Anniversary's Dinner

Tomorrow, 3rd August, is my 1st year Anniversary with Tony so today I decided to have grill Chicken thighs with sauteed onions and mushroom served with Begedil. Begedil is a Malay name for potato cutlet or potato patties. It is a popular side snack that is sold everywhere at Malay hawker stall or food court in Singapore. I will usually buy it to go with my Nasi Lemak, Mee Rebus or Mee Soto when I was in Singapore. Feel like sharing this with Tony who loves potatoes..

Ingredients For Begedil:
2 Medium-size potatoes
50g minced chicken/pork or you can substitute with some chopped bacon or any ingredients you like.
2 Small Shallots, Chopped
1 Beaten Egg for coating of the Begedil
Salt and pepper to taste
Cooking oil

1. Wash and peel potatoes, slice into half. Boil them in hot water till soft. 
2. Mash them, using a mortar of fork. Add a pinch of Salt and some pepper. 
3. Fry the shallots,  follow by  the minced chicken/pork for a while. Mix all ingredients together with the mashed potatos (except the egg), till well mixed.
4. Shape into a ball, press down lightly to make patties shape.Set aside.
5. Heat oil in a saucepan, once ready, dip the potato ball (Begedil )individually in the eaten egg and drop into the hot oil.
6. Remove it from the oil once it turns golden brown.

He is a very romantic man, he used the excuse of topping up my car's fuel...secretly went to buy the flower and also got me a Relaxing Facial Voucher...
