Beer Battered Fish



This is my quick and easy recipe for a beer batter. You can use on Fish, Prawns/Shrimp, Calamari  or Vegetables. I have improvise this beer batter by adding cornstarch to create that extra crispiness. The key ingredient would definately be Cold Beer. You can use the batter for onions ring as well.  

Ingredients
(This batter is good enough for about 900g/2pounds of Choice of ingredients-Fish,Vegetables...)

1/2 Cup Self Raisng Flour (If you don't have self-raising flour, you can use all purpose flour so instead of 1/2 teaspoon of baking soda increase it to 1 teaspoon)

1/2 Cup Corn Starch
1/2 Teaspoon of Baking Soda
1/2 Teaspoon Ground White Pepper (optional)
A pinch of Salt
3/4 to 1 Cups Cold Beer
Oil for Deep frying (preferably Vegetable Oil)

1. In a small mixing bowl add flour, corn starch, baking soda, salt and black pepper.  
2. Stir in 1 cup of  the beer (you can add more than one cup to obtain the smooth consistency of a pancake) and do it slowly, stirring all the time with a whisk. Whisk until the batter is light and frothy.
3. Put the batter in the fridge for 20 minutes.
4. Heat the oil to 180C/350F.
5. When the oil is hot, dredge the fish into the batter and let it get coated thickly. Gently place it in the oil and repeat. Do not crowd the pot or deep-fryer. Do this in several batches.
6. Fry until the fish is golden brown, moving it around the oil so it does not stick anywhere. This take about 5-8 minutes.
7. Let the fish drain on a wire rack or paper towels.
8.Serve at once with a sauce (Tartar sauce,Ketchup, etc) and lemon wedges.
