Chicken with sautéed onions and capsicum



A simple dish that I whipped up last minute using whatever ingredients I had at home as I thought Tony may want to have Fish and Chips for dinner so I did not plan to  prepare and cook any dinner.   I have only 2 sets of chicken legs and wings, onion and capsicum in the fridge, I will have to cook just with these ingredients. Surprisely, onion and capsicum were a perfect match with Chicken. Nice sweet flavour!

Ingredients:
2 Boneless Chicken Legs
2 Winglets
1 1/2 Tablespoons Oyster Sauce
1 Tablespoon Seasame Oil
Dash of Pepper
1/2 Onion, slice thinly
1 Yellow Capsium, diced it
2 Tablespoon Oil

1. Marinate the chicken with oyster sauce, seasame oil and pepper. Set side while you prepare the rest of the ingredients.
2. Heat up a pan with oil in medium heat. Sautee the onion till soft. Add in the capsicum. Sautee for a min then add in the chicken. Brown both sides of the chicken.
3. Cover with a lid and lower the heat and simmer until the chicken  is cooked through. Need not add any water as the onion and capsicum will caramalize and there will be some juice coming out.Throughout the process, do remember to flip the chicken.
