Last night, after dinner Tony asked me if I brought any sweet treats for dessert. However, I did not buy any...he sounded disappointed as sometime I will bake cake, cookies, muffins or have some dessert to surprise him or even buy ice-cream. As both of us were still down with down and are still trying to recover, so I did not have anything at home for dessert. Feeling bad, I decided to make Blueberry Choc Chip Muffins for him this afternoon. Receipe adapted from "101 Great Pies Ideas" From Sunbeam and it is real simple to bake.
Ingredients:
1 Cup of Self Raising Flour
1/2 cup of Caster Sugar
60g Choc Chips
1 Egg, Lightly Beaten
1/4 Cup of Oil
1/3 Cup of Milk
100g of Bluberries (Drained Canned Blueberries)
1. Preheat oven to 180C.
2. Place flour, sugar, choc bits in a bowl. Mix well.
3. Mix together, egg, oil and milk. Stir into flour mixture.
4. Add blueberries, stir until combined.
5. Place muffin cases into the muffin tray. Spoon 1/3 of the mixture into each of the muffin cases.
6. Bake in the oven for 20-25minutes until it turned golden brown.
