Simple Shortbread for Christmas


Don't know what to get my lovely bosses for Christmas, I decided to bake some cookies to give as a present. It is the thought that counts. I wanted something really simple and easy, shortbread would be great!

Make about 24 Full Sized biscuits or 30 Mini Biscuits

 
Ingredients:
250g Butter
1  Cup Icing Sugar
1 ¼ Cups Corn Flour
1 ¾ Plain Flour
Cachous (optional)

1. Pre-heat oven to 180°C.
2. Cream butter and icing sugar together until light andfluffy.  
3. Sift in corn flour and flour, mix in using a woodenspoon. Combined mixture should be kneaded well in the bowl.
4. Lightly flour a board or clean bench space and roll outmixture to about 0.5cm in thickness.
5. Cut out using a cutter of your choice or cut into pieces.Place on a lined baking tray - at this point you can decorate with little cachous.
6. Bake for 15-20 minutes, until golden but not brown.
