Creamy Baked Chicken Thighs



Winter is here and it has been very cold over the past week. And I have been cooking some soup for dinner to warm us up. The idea of this dish came from the soup I have been cooking. It was a really simple and no fuss dish. Minimum preparation time.

Ingredients :
1 can (420g) Watties' Condensed Creamy Chicken Soup
1/2 Can (200ml) Chicken Stock, Campbell's Salt Reduced (Using the empty can of creamy chicken as a gauge. Pour chicken stock onto it measuring 1/2 Can) 
1/4 Teaspoon Ground Black Pepper
1 Cup Frozen Mixed Vegetables
600g Skinless, Boneless Chicken Thighs (About 6pcs)
1/2 Cup Shredded Cheddar Cheese

 



1.Preheat the oven to 190 degrees. Spray a baking dish with cooking spray.  Place chicken thighs in bottom of pan.
2. In a medium sized bowl, stir the soup, stock,  black pepper and vegetables until well blended.
3. Pour over chicken in pan and spread around to cover all pieces.
4. Bake for 50 minutes or until the chicken is cooked through.

5.Top with the cheese. Let the  stand for 5 minutes before serving.
