Simple Chicken Pot Dish


This is an extremely simple and no-fuss dish, no frying required and  no smoke/fume free dish.It is a healthy dish in my context, as it only used 1 tablespoon of seasame oil. This is my mum's very own recipe, just like to share with everybody. My mum would love to share her recipes too.

Serving:3-4

Ingredients:
5 Chicken Thighs Bone in-About 800g
1 Large Onion, cut into quarters
2-3 Medium Potates, cut into big cubes
1 Medium Carrot, cut into thick round
1 Can of Mushrooms
2 pieces of  2 by 1 inch thickness, peeled and pound it flat
150ml of Water
4 Tablespoon Soy Sauce
1 Teaspoon Seasame Oil


Brand of Mushroom I used
1. Put ginger and onions onto a bottom of a big pot. Followed by potatoes (if you do not like the potatoes to be too soft, add the potatoes after you add all the seasoning at point 3) and carrots. Then lay the chicken thighs on top, lastly followed by mushrooms.


2. Cover the pot and turn on High heat for 5 minutes.
3. Add in the water and stir the pot, bringing the chicken to the bottom of the pot. Cover and leave it on high heat for another 10mins, before turning the heat down to medium-low to simmer for 15mins then add in the soy sauce, dark soy sauce and seasame oil.(Add potatoes at this stage if you do not like it to be too soft) Stir the pot occasionally so that all the ingredient are cooked. SImmer for another 20mins.
4. Open the lid slightly after the 20mins simmering process and turn the heat down to low, continue to simmer for another 10-15mins or until the chicken is cooked through.

That's it...you are ready to serve with rice! Enjoy...
