This evening, I decided to do a crispy fried chicken as like the way my mom cooked it. My mum will only do fried chicken once in a blue moon as she believes that fried food are not healthy which I agreed totally. But I just can't helped and is loving fried food especially in New Zealand, due to the cool and cold climate. Though, it may not be healthy but it is a comfort food for me.
Servings for 3-4
Ingredients:
600g of Chicken (Use whatever parts you like, I am using chicken wings and drums)
2 Tablespoon Oyster Sauce
1/4 Teaspoon White Ground Pepper
1/2 Tablespoon Seasame Oil
1 Teaspoon Honey
4 Tablespoon Rice Flour
4 Tablespoon Plain Flour
Oil for Deep frying
1. Clean the chicken and pat dry with paper towel.
2. Marinate the chicken with oyster sauce, pepper, seasame oil and honey. Marinate for at least an hour.
3. In a separate bowl, mix the rice flour and plain flour together. Coat the chicken pieces with the flour mixture, shaking off excess flour.
4.Heat oil in a large skillet until the oil shimmers, gently add the chicken in batches.Fry until the juices run clear and golden 8-10minutes depending on how big the chicken parts are.
5. Drain fried chicken on a paper towels to absorb excess oil. Pre heat an oven to 130C if you have one, put cooked chicken into the baking tray with baking paper to keep it warm while you cook the balance of your chicken.
6.Serve fried chicken hot with chilli sauce or ketchup.
