Basic Scone

On Masterchef Australia Elimination round on Tuesday, contestants that were put into the elimination have to bake basic scones. It just stirred up my craving for scones the next day. In fact, I have all the ingredients needed to make basic scones, yesterday after work when I arrived home. I turned on my oven to preheat it and started making scones. I have made scones before though the previous attempt was not so good but after hearing the tips from the judges at Masterchef Australia I was determined that I will succeed this time. Practices make perfect. The scones that turned out were good and it was best eaten when it is still hot.

Makes 6 scones

Ingredients:
2 Cups Self Raising Flour
2 Tablespoon Of Caster Sugar (You can omit the sugar, I like plain sweet scones)
75g of Butter, cut into small 1cm by 1cm cubes
3/4 Cup of milk
Some milk for brushing

1.Heat your oven to 200ยบ C. Lay a baking tray with baking paper. Sift the self-raising flour into a mixing bowl. Mix in the sugar.
2. Using your fingertips, rub butter cubes into flour until mixture is crumbly just like breadcrumbs.
3. Make a well in the centre. Add in the milk, mix with a spatula until a dough ball is formed.
Dough texture should look like this, not too wet/ smooth
4. Knead gently on a lightly floured board.(Don't over knead the dough or scones will be tough. If the dough looked smooth and well mixed, you have over worked it). The right dough should look coarse and crumbly.
5. Roll out dough to 2 cm thick. Use a round cutter to cut out the scones. Place scones onto prepared baking tray, 1cm apart. Brush the tops with milk. Bake for 20 to 25 minutes or until golden and well risen. Transfer to a wire rack.
6.Serve warm with jam and cream.
