Coronation Chicken Penne


Serving: 4

Ingredients:
4 Cups Penne Pasta - cooked and drained
2 Tablespoons Parsley, chopped
200g Cooked Chicken, shredded
50g Ham, chopped
½ Red Capsicum, finely diced
½ Onion, , finely diced
½ Cup Mayonnaise
½ Cup Water
2 Tablespoons Tomato paste
1Tablespoon Curry Powder
Salt and Pepper to taste
1 Tablespoon Oil

Penne Pasta
1. Cook pasta according to package directions, drain under cold water and put into a large bowl. Set aside while you prepare the sauce

Sauce for Penne

1. Heat oil in a  large saucepan. Add onion and capsicum cook gently to soften. Add curry powder and tomato paste and continue cooking for a further minute.
2. Add mayonnaise and water . Mix well. Add cooked chicken and ham, cook for further minute.  Add salt and pepper to taste. Remove from heat.  
3. Add in cooked penne and parsley, mix well ensuring all penne are well covered with sauce.
4. Dish up and serve. Or if you like it cold refrigerate for 4 to 6 hours for the the penne to absorb all the flavours.
