This is a pretty simple and easy to bake Cheesecake. Recipe was adapted from Countdown.co.nz , however I have made some slight adjustment on the amount of sugar and butter. Click the above link for original recipe.
Bake 1 20cm Cheesecake
Ingredients:
1 Pack Arnott’s Nice Biscuits(250g), crushed
1 Pack Arnott’s Nice Biscuits(250g), crushed
1 Teaspoon Cinnamon
125g butter or margarine, melted (Increase from 115g to 125g)2 Block of (250g) Cream Cheese (increase from 450g to 500g)
1/2 Cup Caster Sugar (Reduce from 1 Cup to 1/2 Cup)
3 Eggs
1 Teaspoon Vanilla Essence
1.Pre-heat oven to 150ºC.
2.Mix together crushed biscuits, cinnamon and melted butter. Press mixture firmly onto base and sides of a lightly greased 20cm spring-form tin or loose bottom tin. Refrigerate until required.
3.Beat cream cheese, adding sugar gradually, until smooth.
4.Beat in eggs, one at a time, and vanilla essence until mixed thoroughly.
5.Pour mixture carefully into prepared shell. Bake for 50 minutes.
6.Once baked, turn off heat, and let cheesecake cool in oven with the oven door ajar for an hour. Chill in the refrigerator until required.
