Sambal Belachan Prawns with Green Beans


 
Ingredients:
200g Green Beans, cut into 3-4cm length,
10 Medium size Prawns, shelled and deveined
3 Tablespoons Oil
5 Tablespoon Water
1 Tablespoon Sugar
Salt to taste

Belachan Paste
(Blend together in a mortar and pestle)
6 Small Shallots, peeled
2 Tablespoons Dried Shrimp (soak in water briefly)
3 Tablespoon Chili Paste
4 Cloves Garlic
1/2 Tablespoon Roasted Belachan

1. Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain it under running water to stop from cooking.
2. Heat oil in a pan. Add the belachan paste mix and stir until fragrant.
3. Add prawns, green beans and stir-fry for 2minutes and add sugar and salt to taste.
4. Add 5 tablespoon water and stir fry for another 2mins.
5. Serve with steamed rice.

**Asparagus, Eggplants or Okra can be used in place of green beans.
