Bacon and Vegetables Fritters


Serving:2-3

Ingredients:
1 Cup self-rising flour, sifted
1/2 Cup Milk
2 Eggs, beaten
1/2 Onion, finely chopped
1/3 Cup Flat Beans, thinly sliced

1 Can Whole Kernel corn, about 400g. drained
4 Bacon rashers, rind removed and coarsely chopped
1 Cup Parmesan Cheese
1/4 Teaspoon of Salt Pinch of Pepper
I Tablespoon Oil to sautee the onion, flat bean and bacon
2 Tablespoons Of Oil for fritters

1. Heat up a pan over medium heat with 1 tablespoon of oil. Sautee the onions for a1 min then add in the flat beans. Stir fry over medium heat for 2mins then add in the bacon rashers, and cook for another 2mins.  Set aside to cool..
 
 
2.In a large mixing bowl, stir together all the ingredients excluding Oil to make a batter.

 
3.Heat a large frying pan or skillet over medium heat, then add oil and swirl around in the pan.
4.Drop one heaped tablespoon of fritter batter into the pan, patting it flat with the same spoon.

 
5.Cook until golden on each side - about 2 minutes. Remove the fritters from the pan and drain on paper towels as you cook them.
